You will need:
For the Cupcakes:
175g Self Raising Flour
175g Caster Sugar
175g Margarine
3 Eggs
2 tbsp Cocoa Powder
2 tbsp Orange Juice
The zest of an Orange
For the buttercream:
175g icing sugar
75g Unsalted butter
1 tbsp Cocoa Powder
1 tbsp Orange Juice
Method:
For the cupcakes; firstly in a bowl, cream together your margarine and sugar.
Then add your eggs, orange juice and orange zest and mix well.
Then add the flour and cocoa powder and mix until well combined.
Then divide your mixture between 12 cupcake cases, and bake in a pre-heated oven at Gas Mark 5, 190C or 170C fan assisted for about 16 to 20 mins.
For the buttercream; cream together the icing sugar, cocoa powder and butter.
Then gradually add the Orange juice in until it is a spreadable consistency. Then put into the piping bag and pipe on to the cupcakes.
