You will need:
200g Self Raising Flour
100g Caster Sugar
1 Egg
150ml Milk
70ml Oil
2 tbsp Cocoa Powder
100g Chocolate chunks/chips
Method:
1. Firstly in a jug, mix together your milk, oil and eggs.
2. As an optional, you can mix a couple of teaspoons of your flour into your chocolate chips to help them distribute evenly in the muffins as they can sink to the bottoms of the cases otherwise.
3. In a separate bowl, mix together your flour and sugar.
4. Then add your wet ingredients to your dry ingredients and mix until its a batter.
5. Then add your chocolate chunks and mix until well distributed.
6. Then divide your mixture between 12 cupcake/muffin cases, and bake in a pre-heated oven at Gas Mark 6, 200C or 180C fan assisted for 20 mins.
