How to make Chocolate Chip Orange Muffins

You will need:

200g Self Raising Flour

100g Caster Sugar

1 Egg

150ml Milk

70ml Oil

1 Orange (or substitute for 2.5 tbsp orange juice)

100g Chocolate chunks/chips


Method:

1. Firstly, as an optional, you can mix a couple of teaspoons of your flour into your chocolate chips to help them distribute evenly in the muffins as they can sink to the bottoms of the cases otherwise.

2. In a bowl, mix together your flour and sugar.

3. Then, in a separate jug, grate the zest of the orange into your milk. Then juice the orange and add 2.5 tbsp of the orange juice into the milk

4. Then mix in the oil and eggs to the milk mixture.

5. Then add your wet ingredients to your dry ingredients and mix until its a batter.

6. Then add your chocolate chunks and mix until well distributed.

7. Then divide your mixture between 12 cupcake/muffin cases, and bake in a pre-heated oven at Gas Mark 6, 200C or 180C fan assisted for 20 mins.
