How to make Chocolate Checkerboard Cookies

You will need:

250g Plain Flour

150g Butter

100g Caster Sugar

1 tsp Vanilla Extract

25g Milk Chocolate


Makes approx. 30-34 biscuits.


Method:

  1. Firstly in a bowl, cream together your butter and sugar until well combined.

  2. Then, add your vanilla extract and mix together until well combined.

  3. Then add your plain flour and mix until a dough is formed.

  4. Split the dough into 2. Melt the chocolate in the microwave for 20 seconds at a time until melted. Add to one of the doughs and mix until well combined.

  5. Then roll each of the doughs until it is a long rectangle and about 3 cm thick.

  6. Put one dough on top of the other and cut lengthways. Then flip one half of the dough so it will create the checkerboard pattern.

  7. Cut the dough into cookie slices and pop on a pre-lined baking tray.

  8. Then bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for 12-15 mins or until the edges are just starting to brown.
