How to make Chocolate Buttermilk Cake with Chocolate Buttermilk Icing

You will need:

For Cake:

200g Self Raising Flour

100g Butter

175g Caster Sugar

2 Eggs

125ml Buttermilk

2tbsp Cocoa Powder

50g Dark Chocolate


For Icing:

175g Icing Sugar

75g butter

1tbsp Cocoa Powder

2 tbsp Buttermilk



Method:

For Cake:

1. Firstly, in a bowl, cream the butter and sugar together.


2. Then melt the chocolate in the microwave for 30 seconds at a time until melted. Then add to the butter and sugar and mix well.


3. Then mix in the eggs and buttermilk.


4. Then add flour and Cocoa Powder and mix until its a thick batter.


5. Then put your batter into a pre-lined 7 inch cake tin, and bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for 50 mins to 1 hour.


For Icing:

1. In a bowl, mix together the icing sugar and cocoa powder.


2. Then add the butter. Push the butter into the icing sugar using a fork. This should help keep the icing dust down.


3. Once the butter and icing sugar are as mixed as they can be, add the buttermilk a time until it is a smooth buttercream. If you add too much liquid, add more icing sugar to bring it back.
