You will need:

100g Plain Flour

200g Dark Chocolate

225g Brown Sugar

125g Butter

3 Eggs

1tbsp Cocoa Powder

1 tsp Baking Powder

0.5tsp Salt

Method:

1. In a Bain-marie, melt together your dark chocolate and butter. Once melted, mix well and put to once side and allow to cool.

2. Then, in a separate bowl, into your brown sugar, mix the eggs one at a time until well combined. Then whisk until it has doubled in size and pale in colour.

3. In a separate bowl, mix together your flour, cocoa powder, baking powder and salt. Then sieve this into your egg mixture, and fold the flour in to keep as much air in as possible.

4. Then add your cooled chocolate and butter mixture and fold again until well combined.

5. Pour the mixture into a pre-lined baking tin (mine was 18cm by 28cm) and spread evenly.

6. Then bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for 30 to 35mins. The top should be cracked but the middle should not move if the pan is shaken side to side.
