How to make Beetroot Brownies

You will need:

250g Cooked Beetroot

250g Butter

3 Eggs

250g Caster Sugar

200g Chocolate (Plain or Dark)

250g Self Raising Flour

3tbsp Cocoa Powder


Method:

1. Melt together your chocolate and butter. I microwaved them for 30 secs until they were melted. Once melted, mix well and put to once side and allow to cool.


2. You want to grate your cooked beetroot and put to one side.


3. Then, in a separate bowl, into your sugar, mix the eggs until well combined. Then whisk until it has doubled in size and pale in colour.


4. Fold in the melted chocolate and butter into the eggs.


5. Then sieve your flour and cocoa powder into the eggs. Folding in to keep as much air in as possible.


6. Then fold in the grated cooked beetroot.


7. Pour the mixture into a pre-lined baking tin (mine was 20cm by 20cm) and spread evenly.

8. Then bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for 30 to 40 mins. The top should be cracked but the middle should not move if the pan is shaken side to side.
