How to make Baked Jam Doughnuts

You will need:

250g Strong bread flour

30g Caster sugar

30g Butter

1 egg (beaten)

7g Yeast sachet

1/4 tsp Salt

75ml Warm milk

65ml water

1 jar strawberry jam

Melted butter and caster sugar to top


Method:

1. Firstly in a bowl, mix together your flour, salt, sugar and butter, until it resembles breadcrumbs.

2. Then stir in your yeast.

3. Then add the egg, water and milk (the milk should be around body temperate, any higher and it could kill the yeast) and mix until it forms a dough.

4. On a floured surface knead the dough for 10 minutes (to knead use the palm of you hand to push into the dough, pick up and rotate, then repeat - see video for a better idea). Once kneaded the dough should be smooth and elastic.


5. Leave your dough to rise in an oiled bowl that has been covered either with an oiled piece of clingfilm or a clean tea towel. You will need to leave your dough to rise for about an hour or until doubled in size in a warm place.


6. Once risen, on a floured surface knock the dough back for a couple of minutes.


7. Then divide your dough into 12 equal pieces, and roll them into balls. Then place on a floured baking tray making sure to leave plenty of space between each doughnut as they will expand.


8. Cover your doughnuts with your oiled clingfilm or clean tea towel and leave to rise again in a warm place for another hour.


9. Having removed your clingfilm or tea towel bake in a pre-heated oven at Gas Mark 5, 190C or 170C fan assisted for 10-15 mins until they are lightly golden.


10. Then if you want to fill your doughnuts, put some jam into a piping bag and gently pipe jam into each doughnut as much as it will fill.


11. Then to top, brush each doughnut with the melted butter and roll in the caster sugar.
