You will need:
4 sheets of Filo Pastry
2 Apples (Chopped)
2 tbsp Caster Sugar
50g Butter
1tsp Ground Cinnamon
50g Sultanas
1tbsp Icing Sugar
1tbsp Rum (Optional)
Method:
1. Firstly, if using, soak the sultanas in the rum for 30 mins.
2. Then add the chopped apples, sugar, cinnamon and raisins to a bowl and mix until well combined.
3. Then melt the butter in the microwave.
4. Pre-line a baking tray with baking paper, and place one sheet of filo pastry on top. Brush with the melted butter and add the next layer, continue until all the filo pastry layers are used up.
5. Add the apple mix along the shorter edge of the pastry sheet and roll into a log, tucking in the ends.
6. Brush over with the remaining butter, and bake in a pre-heated oven at Gas 5/ 190C or 170 fan assisted for 30 to 35 mins until crisp and golden.
7. Leave to cool and dust with the icing sugar.
