You will need:
400g Puff Pastry
200g Chopped Apple
1 Egg
2 tbsp Sugar (either granulated or golden granulated)
1tsp Mixed Spice
1tsp Cornflour
Method:
1. Firstly, for the filling, in a saucepan on a low heat, add your apples, sugar, mixed spice and cornflour. Cook on a low heat for 2 mins to soften your apples. Remove from the heat.
2. Then roll out your pastry on a lightly floured surface. Cut out rectangles from your pastry double the size you want your pockets.
3. Then spoon the apple mix into the middle of half of each rectangle.
4. Then having pre-beaten the egg, egg wash the side of the rectangle and fold over the pastry. Using a fork press down along the sides to help seal the edges.
5. Put a holes in the middle of each pocket for the steam to escape and egg wash the top of each pocket.
8. Then bake in a pre-heated oven at Gas Mark 5, 190C or 170C fan assisted for 25-30 mins.
