You will need:
For the cake:
120g Margarine (or butter)
120 Brown Sugar
140g Self Raising Flour
1tsp Baking Powder
2 eggs
2 Apples (chopped)
1tsp Cinnamon
For he Crumble:
150g Plain Flour
100g Caster sugar
100g Butter
For the icing:
75g Butter
175g Icing sugar
2tbsp Custard Powder
1-2tbsp cold water
Method:
1. Firstly to make the cake; mix in some of the self raising flour into the chopped apples; this is so the apples don't just sink to the bottom of the cakes.
2. Then in a separate bowl; cream together the brown sugar and butter until full combined. Then mix in the eggs.
3. Then add the cinnamon, baking powder and half of the self raising flour and mix well. Then mix in the chopped apples. Once the apples are coated with the batter then add the remaining self raising flour. We add the apples half way through adding the flour so they get evenly coated with the cake batter, otherwise the batter might be too thick to mix in thoroughly.
4. Then in a pre-lined muffin tray; spoon in your batter. You will then need to make the crumble topping.
5. In a different bowl; mix together the plain flour and caster sugar until combined. Then add your butter in cubed and rub in until it resembles breadcrumbs. Then spoon on top of your cupcakes.
6. Then in a pre-heated oven at Gas Mark 5, 190C or 170 Fan assisted; bake them for 20 mins.
7. Then to make the buttercream icing; mix together the custard powder and icing sugar until combined. Then add the butter until completely combined.
8. Then to make the icing more spreadable; mix in your water bit by bit until you get a spreadable consistency
. Then top your cupcakes with your icing.
