You will need:

For the filling:

350g Apples (peeled and diced)

50g Sugar (either demerara or caster)

200g Blackberries

1tsp Plain Flour

For the Pastry:

200g Plain Flour

1Tbsp Caster sugar

130g Butter

1 Egg

1tbsp Water

Optional:

1Tbsp Milk

Method:

1. Firstly to make the filling; in a saucepan over a medium heat, mix together the chopped apples, sugar, blackberries and flour.

2. Then turn the heat to low, and cook for 5 minutes until the apples have soften. Then take this off the heat and put this to one side while we construct the pastry.

3. In a separate bowl, mix together your flour and sugar. The add your butter and mix in with the tips of your fingers until it resembles breadcrumbs.

4. The add the egg and mix together, add water as required until it comes together as a dough. Put this in the fridge for 30 mins.

5. Then roll out your pastry on a lightly floured surface. I used a 22cm pie tin which I have greased and floured to prevent sticking, then line your tin with the pastry cutting off any excess which we will use for the lid. 6. Then fill the case with the filling.

7. The roll out the remaining pastry. Brush the side of the pie with the milk then top the pie with the pastry top. Pressing down to seal with the pastry bottom, using a fork to seal the top. Put a hole in the middle of the pie for the steam to escape.

8. Then bake in a pre-heated oven at Gas Mark 6, 200C or 180C fan assisted for 45-50 mins.
