How to make a Vegetarian Chilli Con Carne

You will need:

2 Carrots

2 Onions (diced)

2 Bell Peppers (diced)

1tbsp Garlic Powder

1 tbsp Oil

2 tsp Hot Chilli Powder

1 tbsp Mild Chilli Powder

1 tsp Paprika

1 tsp Ground Cumin

300ml Vegetable stock

400g Chopped Tomatoes

0.5 tsp Marjoram

2 tbsp Tomato Puree

400g Kidney Beans

400g Butter beans

400g Chickpeas


Method:

  1. In a saucepan over a low heat, add your oil and onion and sweat for 5 mins.

  2. Then add the carrots, bell peppers, chilli powders, paprika, garlic powder and cumin and cook for 5 more mins.

  3. Then add your stock, tomato puree, chopped tomatoes and marjoram and turn down to a simmer. Simmer for 20 mins.

  4. Then add the kidney beans, chickpeas and butter beans and simmer for a further 10 mins.

  5. Then enjoy.
