How to make a Low Meat Chilli Con Carne

You will need:

250g Minced Beef

1 Onion (diced)

2 Bell Peppers (diced)

4 Garlic Cloves (diced)

1 tbsp Oil

2 tsp Hot Chilli Powder

1 tbsp Mild Chilli Powder

1 tsp Paprika

1 tsp Ground Cumin

300ml Beef stock

400g Chopped Tomatoes

0.5 tsp Marjoram

2 tbsp Tomato Puree

800g Kidney Beans (or sub half with Butter beans)


Method:

  1. In a saucepan over a low heat, add your oil, onion and garlic sweat for 5 mins.

  2. Then add the bell peppers, chilli powders, paprika and cumin and cook for 5 more mins.

  3. Then add your beef and brown all over, this should take 5 mins.

  4. Then add your stock, tomato puree, chopped tomatoes and marjoram and turn down to a simmer. Simmer for 20 mins.

  5. Then add the kidney beans and simmer for a further 10 mins.

  6. Then enjoy.
