How to make a Blueberry Loaf Cake
You will need:
For the Cake:
175g Self-raising flour
175g Caster Sugar
175g Margarine/butter
3 eggs
175g Blueberries
For the topping:
100g Icing Sugar
1tbsp Milk
Method:
To make the cake, begin by creaming the butter and caster sugar in a bowl until they are well combined.
Then, add the eggs and mix well.
Mix in the self-raising flour until the batter is smooth.
Carefully fold in the blueberries until they are evenly spread throughout.
Transfer the batter into a pre-greased and lined 2lb loaf tin.
Bake in a preheated oven at Gas Mark 4, 180°C, or 160°C for fan ovens, for about 50 minutes to 1 hour. To ensure the cake is done, insert a toothpick into the center; if it comes out clean, the cake is ready.
Let the cake cool slightly.
For the icing, mix the icing sugar with the milk in a bowl until smooth, ensuring it coats the back of a spoon.
Spread the icing over the cake.
Slice into desired portions and enjoy.
